Ingredients
- 1/2 cup moong dal
- 1/2 cup toor dal
- 21/2 cup water to boil dal
- 1 inch seedless tamarind
- 2 tsp Jaggery
- 4 tsp MTR sambar powder
- 1tsp Red chilly powder
- Salt per taste
- 1 big chopped Onion
- 6 cloves of Garlic
- Grated coconut
- Few springs chopped Cilantro
- 2 cups chopped Vegetables
- Bhindi
- Carrot
- Beans
- Peas
- Tomato
- 1 tsp Turmeric powder
- Asafoetida
- 4 tsp Ghee
- 2 tsp Jeera
- 2 tsp mustard seeds
Instructions
Preparation before making Sambar
- Boiling dal and vegetables
- Wash the dal and add 21/2 cup water
- Chop vegetables and onion into cubes
- Steam beans, carrot and peas with the dal. Do not steam bhindi
- Pressure cook the dal and vegetable until dal is super soft
- Soak the Tamarind in warm water
- Masala: Grind the coconut and garlic to smooth paste with little water
- Making the sambar
- Take a kadhai/thick bottom deep pan
- Heat ghee
- Add mustard seeds and allow to splutter
- Now add Jeera
- Then add Asafoetida and turmeric powder
- Add chopped onion and cook until golden brown
- Once done add chopped tomatoes and cook until soft
- Add chopped bhindi and cook well until soft
- Now add red chilly powder and MTR sambar powder. Cook until oil separates out
- Squeeze the tamarind pulp from the soaked tamarind and add to the dal and mix well
- Add the dal and vegetables to the tadka above. Mix well
- Now add salt and Jaggery and mix well again. Allow to boil
- Once boiled add the masala we made above.
- Add chopped cilantro and let it boil for good amount of time on low flame. The more we boil, the taste is better
- Serve with idli, Dosa or rice with ghee. Yumm!
