Serves 3-4 people
Ingredients:
- 2 cups basmati rice, cooked
- 1 medium sized onion, chopped
- 4-5 cloves garlic
- 2 inch ginger, grated
- 1/2 cup peas
- 2 carrot, small cubes
- 1 cup French beans, small pieces
- 1 small potato, small cubes
- 1/2 capsicum, small cubes
- 2 tomatoes, small cubes
- 1/2 cup cauliflower, small cubes (optional)
- 1/2 cup paneer, small cubes (optional)
- 1/2 lemon, juiced
- 2-3 tsp red chilly powder
- 2-3 tsp turmeric powder
- 2-3 pav bhaji masala
- Cilantro
- 4 Tbsp oil
- 2 Tbsp butter
- 2 tsp - Cumin seeds or Jeera
- 2-3 tsp - Hing
- 2 tsp - Dhaniya powder
- 2 tsp - Jeera powder
- Salt to taste
Preparation:
- Peel and crush the garlic cloves. Keep it aside
- Chop the cilantro. Keep it aside
- Chop all the vegetables and grate the ginger
- In a pan/kadhai, heat oil. Take a big kadhai sufficient to hold the cooked rice and the vegetables
- Once hot add jeera seeds and allow to splutter
- Now add turmeric powder and hing
- Then add garlic, ginger and roast till raw taste is gone
- Now add chopped onions and sauté well until golden brown
- Add chopped capsicum and sauté
- Now add beans, carrot, peas, potato and little salt and cook with closed lid, until the vegetables are cooked well
- Now add the cauliflower and paneer and sauté until cooked
- Now add tomatoes and sauté again
- Once the tomatoes are well cooked add pav bhaji masala, red chili powder and sauce till the oil separates out
- Now add cooked rice, salt and mix well.
- Turn off the flame and add lemon juice and cilantro
- Sever hot with any type of raita
